Apple Photos will sometimes label animals I have photographed. And sometimes it does not. When it does label them it seems very accurate. As you can see below a little icon is placed on the animal. Click on it and you get an info panel.
But I can't find any way to toggle this on or off. And I can't find any documentation of it happening. When I search I get lots of info about me being able to label my pets with names, just like humans.
